A lot of people ask why we deliver on Tuesday and Friday instead of every day or only on weekends. The answer is operational, not arbitrary. 📅
Microgreens are at peak quality when cut. The longer between cut and consumption, the more flavor, texture, and nutrient density decline. Even with our 6-week shelf life protocol, the absolute peak is the first 24 hours.
Tuesday and Friday are the two days that let us run a full SE PA route while every single delivery is within hours of cut. Here is how the operational day actually unfolds.
The Day Before: Sunday and Thursday 🌱
On Sunday for Tuesday delivery, and on Thursday for Friday delivery, we do final pre-harvest checks. The trays scheduled for cut are at peak height, peak color, and peak true-leaf development. Anything not at peak gets rolled to the next harvest cycle.
We also do final route optimization based on the subscription orders that came in over the previous days. Routes get re-sorted to minimize drive time and keep the cold chain tight on every box.
Delivery Morning: 5 AM Cut to 8 AM Pack 🥬
Cutting starts at 5 AM. Sergio and the team hand-cut every tray with kitchen-grade scissors. Hand-cutting protects the delicate stem structure that mechanical harvesters damage, which is the single biggest factor in our 6-week shelf life.
As trays come off the cut bench, they go directly into a refrigerated room at 38°F. Cold chain starts immediately. By 7 AM, all the cut microgreens are temperature-stable.
Packaging happens 7 to 8 AM. Microgreens are weighed into biodegradable containers, labeled with cut date, and loaded into temperature-controlled delivery bags.
On the Road: 8 AM to 6 PM 🚚
The Tuesday route covers central Montgomery County (Schwenksville, Collegeville, Lansdale, Norristown, King of Prussia, Plymouth Meeting), eastern Chester County (Phoenixville, Spring City, Chester Springs), and parts of Berks (Pottstown, Boyertown).
The Friday route covers Bucks County (Doylestown, Newtown, Yardley, Levittown, Bristol, Quakertown), Philadelphia (Center City, Manayunk, Chestnut Hill, North Philly, South Philly, Roxborough, Germantown), Delaware County (Media, Havertown, Drexel Hill, Broomall, Lansdowne), and the rest of Chester County (West Chester, Downingtown, Exton, Coatesville, Kennett Square).
Each delivery zone has a target time window. You can opt for a contactless drop, a porch handoff, or a scheduled meet at the door. Most subscribers do contactless drops in a temperature-controlled bag we leave on first delivery.
Why Not Daily or Weekend Delivery? 🤔
We piloted daily deliveries in 2024 and weekend-only deliveries in 2023. Both broke the operational model in different ways.
Daily means smaller route density, more drive time per delivery, less efficient cold chain, and we either have to raise prices significantly or absorb a margin hit that puts the operation at risk. Weekend-only means we cut on Friday for Saturday delivery, which means 24 hours between cut and customer instead of 4 to 8 hours, and the freshness story weakens.
Tuesday and Friday is the optimal balance. Twice a week is enough for almost every customer use case (weekly subscribers receive on Tuesday OR Friday, biweekly subscribers receive every other Tuesday or Friday). The route is dense enough to keep prices reasonable. Every box goes from cut to customer within hours.
