Cantaloupe Microgreen Fruit Salad π
Fruit salad with the secret ingredient: fresh cantaloupe microgreens scattered across the top. Green leaves that taste like melon. Brunch conversation starter.
Ingredients
- 2 oz fresh cantaloupe microgreens
- 1 cup cubed cantaloupe
- 1 cup cubed pineapple
- 1 cup halved strawberries
- 1 cup blueberries
- 2 tbsp lime juice, 1 tbsp honey
- Fresh mint to finish
Method
- Combine the cubed fruits in a large bowl.
- Whisk lime and honey, drizzle over fruit, toss gently.
- Transfer to wide bowl. Tear in mint if using.
- Scatter microgreens generously on top right before serving. Eat within 30 min.
