Summer Corn Salad ๐ฝ
Summer salad with sweet corn microgreens, fresh corn kernels, cherry tomatoes, avocado, lime-cilantro dressing. Double-corn flavor that tastes like a Pennsylvania August.
Ingredients
- 3 oz fresh sweet corn microgreens
- 2 cups fresh corn kernels (2 ears)
- 1 pint cherry tomatoes, halved
- 1 avocado, diced
- 1/2 cup queso fresco or cotija (optional)
- Dressing: olive oil, lime, jalapeรฑo, cilantro, honey, salt
Method
- Whisk dressing in small bowl.
- Combine corn, tomatoes, avocado, cheese. Toss with half dressing.
- Pile microgreens on top, fold once.
- Drizzle remaining dressing, pepper. Eat now.
