Dino Kale Microgreen Pesto π₯¬
Kale pesto with tender Dino Kale microgreens instead of fibrous mature kale. No massaging, no blanching, no bitterness. Holds a week in the fridge under olive oil.
Ingredients
- 2 oz fresh Dino Kale microgreens
- 1/2 cup fresh basil
- 1/3 cup toasted walnuts or pine nuts
- 2 cloves garlic, smashed
- 1/2 cup olive oil
- 1/3 cup parmesan
- 1 tsp lemon zest, 2 tbsp juice, salt, pepper
Method
- Toast nuts 3-4 min in dry pan. Cool fully.
- Pulse microgreens, basil, garlic, nuts until coarse.
- Stream in oil until your preferred texture.
- Pulse in cheese, zest, juice, salt. Adjust. Holds 7 days under oil.
