French Onion Soup 🍜
Classic French onion soup finished with fresh onion microgreens on top of the molten gruyère. Onion-on-onion at restaurant level.
Ingredients
- 2 oz fresh onion microgreens
- 3 lb yellow onions, thin sliced
- 4 tbsp butter, 1 tbsp olive oil
- 1 tsp salt, 1 tsp sugar
- 1/2 cup dry white wine or sherry
- 6 cups beef broth
- 2 sprigs thyme, 1 bay leaf
- 4 baguette slices toasted, 8 oz Gruyère
Method
- Caramelize onions 35-45 min, stirring every 5, until deep golden brown.
- Add wine, scrape fond, reduce 2 min.
- Add broth, thyme, bay. Simmer 15 min.
- Ladle into bowls, top with baguette and Gruyère. Broil 2-3 min. Crown with microgreens.
