Farmer's Choice Power Salad 🥗
Works with any blend. Avocado, seeds, cheese, lemon-tahini dressing frame whatever varieties the farmer picked. Half the bag in one meal.
Ingredients
- 4 oz Farmers Blend (half the bag)
- 1 ripe avocado, sliced
- 1/4 cup cherry tomatoes or grapes
- 2 tbsp toasted pumpkin or sunflower seeds
- 2 oz feta, goat cheese, or fresh mozzarella
- Optional: poached egg, grilled chicken, chickpeas
- Dressing: tahini, lemon, oil, honey, garlic, salt, water
Method
- Whisk dressing, thin with water tablespoon at a time.
- Pile the Blend in 2 wide bowls. Do not chop.
- Scatter avocado, tomatoes, seeds, cheese, optional protein.
- Drizzle dressing. Eat immediately. Every bite tastes slightly different.
